Gold Symbol: the bet that changes the symbols
The bet panel has two selectors: Gold Symbol and Play. Total Play is the two multiplied, so Gold Symbol 128 with Play 1 costs 128 per spin, and Gold Symbol 48 with Play 1 costs 48.
Compare the two screenshots. At 128 the dragon, tiger and horse on the reels are solid gold. At 48 the dragon, tiger and phoenix are back in their normal colours and only the monkey is gold. So the higher the Gold Symbol setting, the more of the animal set is upgraded. At 48 all four jackpot meters (Grand, Major, Minor, Mini) also read 0, where at 128 the Grand showed 235756.
Why gold matters: the paytable
The paytable lists each animal twice. For three, four and five of a kind:

A normal dragon line pays the same as a normal horse. A gold dragon pays ten times that. In other words, a low Gold Symbol setting is not just a smaller bet, it is a flatter paytable.
